5:2 Diet - STEWED CHICKEN WITH GINGER, BABY BOKCHOY, DANDELION. PEPPERS

I fast today. My last fasting was Monday and that proved to be harder than any other. hmmm. I guess there are many factors that affect my appetite or should I say "cravings" because there are days when I could breeze through a fast while there are days when I truly truly struggle. I think psyching self in anticipation of a fast day should help.  First of all. FASTING is supposedly a day without food so I should stop thinking food and avoid, supermarkets, food shows, commercials etc etc.. hibernate for a day  HaHa. Not really,  but you see, when you tell yourself, you're not suppose to enjoy eating today. you just don't expect to eat, shut it down! Do something, get busy, do your taxes over,  write a book,  build a house, something haha then it get should get easier.

But today of all days I decided to come out of my being Pescatarian and cook one of my childhood's favorite chicken dish with an organic chicken. Little craving from not eating chicken and meat for 8 months. So here goes.

Saute' garlic, onion and ginger with olive oil spray on very low heat, till it's soft, add chicken, brown then add water boil and simmer. When chicken is half cooked add chayote squash, simmer till cooked then turn off the heat and add baby bok choy, dandelion and bell peppers. Salt and Pepper to taste.

Oh by the way after 8  months of Pescatarianism- Chicken does not taste as appetizing hmmm TO ME now. but Hey Try it, it should be yummy and low cal.
