March 4 Menu

Breakfast
Breakfast Sausage celery Egg Beater scramble

Lunch
Cinnamon Jerk Chicken
3 lbs chicken
1 tsp ground Cinnamon
2 tsp salt
1 tsp ground pepper
5 cloves garlic
1 chopped onion
2 cups water
1 can (6 oz) tomato paste
1 tbsp Italian herb seasoning
1/2 cup Parmesan cheese
Olive oil

Rub cinnamon salt n pepper into chicken that have been patted dry with ye fingers. Sear chicken on both sides approx 4 min.put aside on same Pan, lower heat to medium sauté garlic n onion.add 1/2 cup water , deglaze pan.when water has evaporated ,add the remaining 1 1/2 water, tomato paste, Italian seasoning .mix. Add chicken tomatoes liquid should civet 3/4 of chicken , cover pot and simmer over medium heat for 30-40 minutes till chicken is tender and fully cook
